 What's happening here, you might ask? In this case, the water in this bottle, super-pure and free of contaminants, has been frozen below the freezing point of water. However, due to the fact that the water is free of contaminants or other minerals, ice crystals have no nucleation points to form around naturally, which precludes the change from liquid to solid. However, a sharp agitation or motion is sufficient enough to start the crystallization process, and ice forms throughout the bottle in a chain reaction.
